Go Beyond Dining at Covey Rise
Our chef prepares each course to enhance the Covey Rise experience, and whether you are here during our normal hunting season or for a private event, you'll receive a carefully thought out and lovingly prepared meal.
On any given occasion at Covey Rise you can imagine yourself dining on fine dishes such as Lacquered Quail with Steen's Cane Syrup and Creole Mustard, Spiced Duck Breast with Ginger and Local Honey, or a 12 oz Pork Chop with Roasted Garlic, Rosemary and Natural Jus.
We strive to provide restaurant-quality meals that go beyond just sustenance for our guests. The produce we serve is grown and harvested daily on our property. We cook with tons of heirloom variety and the same product that is served in the finest upscale restaurants from Houston, TX to Watercolor, FL via our farm to table venture Covey Rise Farms.
Private Field to Table Events
Covey Rise offers field to table events for private bookings. These events include a tour of Covey Rise Farms along with dinner, overnight accommodations and breakfast the next morning. These events are scheduled from May – August. Contact us to customize a special event with additional activities.
A minimum of 6 people is required to reserve the Lodge for one of these events.

We spend a lot of time sourcing and testing product. Midwestern beef, choice and prime grade. Prepared simply to highlight true flavors rather than marinating or over seasoning.
Our chefs take full advantage of this fact and harvest fresh produce daily so that “field to table” is not just an expression, but the basis of dining at Covey Rise.
Meet Our Chef
Born and raised in South Louisiana, Chef Marc Lyons brings a lifetime of culinary passion to every dish he creates. While many the world over are drawn to Louisiana for our exceptional cuisine, that rich tradition served as a stepping stone for Marc to explore what he knew at an early age was his calling: the pledge to master the techniques that allow truly great chefs to bring out the best in exceptional product and to deliver on that promise to every patron.
Always Farm Fresh Ingredients
We don't start with a recipe and then go find the ingredients. We start with the freshest ingredients and products and then treat them simply.
We source our vegetables from adjacent Covey Rise Farms, a 70-acre sustainable agriculture operation that provides produce for the finest of New Orleans’ restaurants.
Our chef is inspired by flavors that don't have to have added fat to taste good.
